After being steamed, boiled or fried, the meat will be smoked with bits of wood, tea leaves, cypress branches, bamboo leaves, peanut shells and sugar to give them a fresh smell and smoky flavor. Steaming is one skill the restaurant excels at, which looks easier than it is to perfect. Soybean paste adds a fresh and salty flavor to the meat when steamed together with fish, as the rich flavor of the sauce seeps into each bite.
