Tianjin cuisine sizzles with "eight great bowls" and "four great stews", which can be further classified into "rough", "smooth" and "high". Most popular, however, are three snack items that have gained legendary status throughout the country.

Top of the charts is the "Go Believe" baozi. Well, actually the brand is Goubuli, but in a recent translation contest someone came up with similar-sounding "Go Believe", which has nothing to do with the Chinese original but somehow conveys the astonishment of most who taste the steamed buns with filling.

In the late 19th century, a farmer in neighboring Hebei province had a son when he was 40, an advanced age to be a parent in that era. To ensure the kid would grow up healthy, he gave him the nickname "Doggy". According to rural Chinese custom, a child with genteel attributes would find more difficulty surviving its early years. Hence, the deliberately lowly name.
