Sugar-pulling technique: Intangible culture heritage

Sugar extracted from sprouts of wheat will be heated in a wok until it turns to syrup. Chen scoops up the syrup and thresh the goo vigorously back and force until the sugar color turns from dark brown to white. The sugar will eventually be cut up and served as a unique local snack.
