Taihu dishes have rapidly developed in recent years.
In 1994, fishermen living in the east coast of Taihu Lake, Guangfu town of Suzhou, tried?characteristic Taihu dishes. Later on, Dongshan locals in Suzhou and Xishan fishermen along Taihu Lake also started businesses by offering Taihu dishes. Now some urban restaurants have also introduced Taihu dishes to their menus, attracting many customers.
Guangfu town is regarded as "a landscape of lakes and mountains and fairy grottoes”. The hundred-mile winding shoreline is China's largest freshwater fishing port.
Taihu Lake has more than 100 varieties of wild fishes, among which the white shrimp, white fish and whitebait, are the most popular. Many Wuxi tourists love the brined white shrimp dish.
